The best thing about Mexican is you can free form fillings and it’s always delicious. I’ve started w white corn tortillas and a base of butter lettuce, parsley leaves and garlic mayo, followed by black beans cooked with coriander stalks, garlic, lime juice, fresh tomato and cumin seed, Tabasco and s&p for seasoning (recipe landing on blog shortly). I’ve added charred zucchini and red capsicum with smokey paprika and finished the lot with grated pecorino and Byron Bay Chilli Co. Jalepeno sauce.

Yummo! Pearl barley soup for breakfast! Full of veg and flavour, easy on the digestion and with the addition of shiitake and Kombu makes the stock more umami in flavour. 
Pearl Barley and root veg like carrot are going to tonify the Spleen. From a biomedical perspective, pearl barley is a great (and tasty) source of fiber to keep bowels regular. Combining seasonal fruits with Chinese Medicine Herbs, Goji Berries (Gou Qi Zi), Cinnamon Bark (Rou Gui) and Star Anise (Ba Jiao) to warm and prevent stagnation of the digestion (see ya bloating and gas), and nourish for a bit of a gentle energy kick. Apples are amazing for all sorts of reasons, including their pectin content, and blueberries are well documented for their high levels of phytonutrients. Love breakfast!
